In a past life, I was an avid baker. I made fancy decorated cakes for weddings and birthdays. I also made a ton of cookies to share with family members during the holidays. When I became vegan, I left all of that behind....until now. Finding quality vegan baked goods is a challenge. Here is a recipe for a vegan everything cookie. Enjoy!
1-1/2 c. vegan butter
1-1/2 c. sugar
2 c. brown sugar
4 flax eggs (4 Tbsp. ground flax seeds + 12 Tbsp. water. Mix and set aside)
2 tsp. vanilla
4 1/4 c. whole wheat flour
1-1/2 tsp. salt
3 c. organic oats
1-1/2 c. coarsely chopped walnuts
1-1/2 c. pitted, chopped dates
1-1/3 c. organic shredded coconut
1 small bag chocolate chips (I used Enjoy Life)
Cream the butter and sugars until fluffy. Stir the flax egg and then add it to the mix. Next add the vanilla. Combine the flour, salt, and baking soda in a bowl. Gradually stir it into the mix. Mix in the dates (They will kinda dissolve into the batter). Fold in the oats, coconut, chocolate chips, and walnuts. Scoop 1 Tbsp. onto a cookie sheet. Space about 2-3 inches apart. Bake in 375 degree oven for 8-10 minutes. Let cool for a few minutes. Enjoy!
Yield: approx. 5 dozen cookies.
